WHOLE WHEAT FLOUR COCONUT AND TUTTI-FRUITY BREAD

INGREDIENTS

OUTER LAYER
2 tsp Yeast
4 tbsp sugar
1/2 tsp salt
3/4 cup warm water
2 cups whole wheat flour or wheat flour
2 tbsp of milk

FOR FILLING:
1 cup desiccated coconut
3/4 cup powdered sugar
1/2 cup tutti-fruity
1/4 chopped roughly chopped almonds, cashews and raisins
1/2 tsp powdered cardamom (optional)
1/2 cup olive oil or melted butter




 



For outer layer 

 Mix together warm water, yeast, salt and sugar in a bowl.Let it rest for 2-3 minutes till frothy.

In a big mixing bowl add flour and mix in salt.Pour the yeast mixture and start kneading the dough.Add more lukewarm water as required till you get a smooth dough.

Put some oil on the bowl in which the dough was mixed and place the dough in it to rise

This will take around 1-2 hours, after one hour punch the dough again and let it rest for another 30-45 minutes preferably in fridge this time, in big air -tight jar to give it enough space to rise.







Let' prepare filling now:
Add all the ingredients mentioned. Take a taste test and adjust sugar accordingly if required.

Now take the dough and divide in 2 equal parts. Roll both in equal size. Take one portion and put filling on it, cover with another roll and seal the edges with milk or water, press the edges with back side of fork, ensuring proper seal all over.

Slit the top of the dough with knife from 3-4 sides.

Bake it in pre-heated oven at 200 degree Celsius for 20-25 minutes. Enjoy warm or pack in kids tiffin.

NOTES:
1. IN DOUGH I ADDED MORE SUGAR SO THAT BREAD ALSO GIVE LITTLE SWEETNESS.

2. AFTER FIRST RISE, I PREFER TO KEEP THE DOUGH IN FRIDGE TO AVOID SOURNESS AND TYPICAL TASTE OF YEAST. 

3. IT'S IMPORTANT TO ADD SOME LIQUID IN FILLING WHETHER OIL, BUTTER OR MILK TO BIND IT. ELSE THE FILLING WILL SCATTER WHILE EATING.

4. IN WINTERS, IT WILL TAKE MORE THAN AN HOUR FOR DOUGH TO RISE. 

5. IN CASE, DOUGH DOESN?T RISE IN 1-2 HOUR KEEP IT WARPED IN THICK TOWEL OR SWEATER INSIDE THE MICRO OR OVEN (DON'T SWITCH ON THE MICRO)

6. DON'T FORGET TO SLIT THE DOUGH.

5. Combine the dough if required add some more warm water. Keep it in some warm place for 1-2 hours.











6. Punch the dough and keep it aside for another 30 minutes this time in fridge.











7. Punch again the dough and it's ready.











8.By the time dough is getting ready prepare filling, by adding all the ingredients mentioned.










9. Divide dough in 2 equal parts and roll. Keep filling on one part.










10. Cover with other roll.










11. Seal the edges using water or milk.










12. Use back side of fork and seal the edges all over.










13. Slit the dough 3-4 sides to give space for air. Brush with milk.










14. In oven at 200 degree Celsius for 20-25 minutes.











15. It's baked.
