CAPSICUM PANCAKE

I got impressed after looking at a post wherein poached egg was made between capsicum and bell peppers. Since then wanted to try something different with this concept.

I make mini pancakes of suji (semolina) and malai, so this time thought of making this in these beautifully looking bell peppers.

Believe me this soft, mouth melting suji inside with grilled bell pepper outside taste yummmmmm........ to believe me you need to try it at least once. I am sure you will love to have it again.

Here the main ingredient of this recipe is suji, use un-roasted suji in it or roasted suji can burn while cooking.

I added malai to give good texture and taste to it, in case you want to avoid it can do so. Don't over mix it or will become butter.

You can add any vegetable of your choice. I added only onion and tomato, you can even add finely chopped capsicum.

The batter should be thick or will not give good results. Spread the batter well all over the bell peppers and make sure it should be filled till top or it will not stick to it and can come out easily.

INGREDIENTS
1 red, yellow bell pepper
1 green capsicum
FOR FILLING
1/2 cup suji (semolina)
2 tbsp curd
1 tsp malai (thick cream)
1 small chopped onion
1 small chopped tomato
salt and chili to taste
1/4 tsp eno

METHOD
Slit the capsicum and bell pepper into medium slices.

Take suji or semolina in big bowl, add curd and malai to it. Give a good mix till these 3 ingredients get incorporated well. Now add chopped onion, tomato, salt and chili. Mix it. Add eno just before making.

Heat oil on pan, Keep bell pepper ringlet, fill with batter till top.

Let it cook, flip and cook from other side too.

Serve.

BATTER SHOULD BE FILLED TILL TOP OR IT WILL COME OUT FROM THE RINGLET.

1. Cut the bell pepper into medium thick ringlets.










2. Make batter of semolina, curd, onion and tomato (mix all the ingredients of filling).










3. Keep bell-pepper on pan. fill with batter till top. Turn and cook from other side too.
