INGREDIENTS
2 cups grated Lauki (Bottle gourd)
2-3 tsp ghee or butter
3 tbsp milk powder
1/2 cup milk
1/2 cup milkmaid
1 tsp cardamom powder (elachi powder)
1 cup cream (fresh or whipped) I used fresh Amul milk
METHOD
Peel, wash and grate bottle gourd. Take pan, add ghee and roast bottle gourd for about 4-5 minutes or till it becomes dry.
Don't skip this step. This step avoid curdling of milk.
Add milk and mix well. Add condensed milk and cardamom powder. Let it simmer on low flame.
When it reduce to half, add milk powder. Cook on low flame, scraping the edges and bottom to avoid burning. Once mixture combine together like a dough turn off the flame. Let this mixture come down to room temperature.
Blend this mix to make smooth paste, if required add little milk. Keep aside.
Take cream add 1/2 cup sugar and whip till soft peaks are formed. If you don't have whip cream take regular fresh cream and beat well. Add blended bottle gourd mix and churn again for a minute.
Transfer in air-tight jar and freeze for 8-10 hours.
Enjoy this healthy, creamy and yummy ice-cream with kids.

3. Roast till dry.
