CHOCOLATE SANDWICH COOKIES

INGREDIENTS
1 cup whole wheat flour (Atta)
1/2 cup softened butter
1/2 cup powdered sugar
1/2 tsp baking powder
1 tsp vanilla essence
1 cup homemade chocolate ganache or market made chocolate fudge
cookie cuter of desired shape

METHOD

1. Mix sugar and softened butter. Beat well till it's pale in colour using hand beater or whisker.

2. Add flour and baking powder. mix well.

3. Once flour is well incorporated add 1-2 tbsp milk. If required add more to make smooth non-sticky dough.

4. Wrap the dough in cling film and keep in frridge for 30 minutes.

5. While dough is resting pre-heat oven at 160?C.

6. Take a small part of dough (around lemon size) and roll it.

7. Roll the dough medium thick and cut with the cookie cutter of your choice.

8. Bake it for 12-15 minutes at 160 degree Celsius.

9. Let cookies come down to room temperature.

10. Put one teaspoon of ganache and spread it all over with the help of knife.

11. Keep another cookie and press gently.

12. Can store it in air-tight jar for 15-20 days.
