BROCCOLI- SOYA CUTLET

INGREDIENTS
1 large chopped onion
1 cup finely chopped broccoli
1/2 cup boiled and squeezed soya granules
1 cup boiled potato
1/2 cup breadcrumbs
some chopped coriander leaves
salt and chilli to taste
1 tsp garam masala
1 tsp coriander masala
1 tsp chaat masala

FOR COATING:
1 cup breadcrumbs
2 tbsp cornflour
1/2 cup water




METHOD
Hot water in pan, add soya granules, cook for a minute. Strain it. Let it come down to room temperature. Squeeze out the excess water and keep aside.

Saute onions till transparent. Add chopped broccoli and cook on low flame till cooked. This will take around 5 minutes. Add the dry spices and give a good mix.

Add soya granules. Mix and cook for another 2-3 minutes or till excess moisture is evaporated and its dry. Turn off the flame and keep it aside for cooling.

Till that time mash boiled potatoes. Add broccoli soya mix and breadcrumbs. Mix everything well.

Make coating by mixing cornflour and water. Make a thin batter.

Make cutlets and dip in cornflour batter. Coat in breadcrumbs and deep fry or shallow fry.

YOU CAN PUT CUTLET BETWEEN BREAD WITH CHEESE SPREAD OR MAYO INSIDE AND PACK IN KIDS LUNCH BOX.

4. Mix well, turn off the flame and let it come down to room temperature.










5. Mash boiled potatoes.


 

6. Now mix broccoli soya mix.




7. Breadcrumbs.



8. Again good mix with some fresh coriander.

 

9. Dip in cornflour-water batter. Coat in breadcrumbs.





 10. Deep fry or shallow fry.










 11. Till golden and crisp.
















12. Serve!!
