INGREDIENTS
1 1/2 cup whole-wheat flour
2-3 tbsp cocoa powder
1 1/2 cup powdered sugar
1/2 cup softened butter
1/2 cup milk
2 tbsp coffee powder
1/2 tsp baking powder
1/2 tsp baking soda
2 eggs
For white chocolate frosting:
1 tbsp coffee
1/2 cup white chocolate
3-4 tbsp fresh cream
I make cake at least once a week and give my kids in their lunch box. As most of the kids my kids too love it. Now making cake every week becomes a challenge as they look out for different flavours.
Sometimes I make lemon cake chocolate cake, egg-less chocolate cake, banana cake, carrot cake, banana chocolate muffin, apple cake,. You can find all these cakes by clicking on it.
So this week thought of making something different. I tried my hands on coffee cake. The rich aroma of coffee is undoubtedly irresistible.
Quantity of coffee powder can be adjusted according to the taste. I kept it moderate just for flavour as I feel more caffeine can be harmful for kids.
I added cocoa powder in this cake but that to very less quantity. I wanted to give it a coffee looks so I added only 2 tbsp. If you the pics below, you will find very light shade of brown, resembling coffee.
Making frosting on top is completely optional. I had lot of white chocolate with me in stock so added it, if its not available you can avoid it, it will taste as good.
I am sure your kids will also love this aromatic coffee cake.
DO NOT ADD COFFEE WITHOUT DISSOLVING IN HOT WATER OR IT WILL GIVE LESS AROMA AND TASTE.
METHOD
Sieve flour, cocoa powder, baking soda and baking powder together in a bowl and keep aside.
Dissolve coffee in 1/4 cup hot water.
In other bowl, beat together butter, sugar, eggs and dissolved coffee till sugar dissolves completely.
Now mix flour and milk in it. Mix well. If required add more milk to get right consistency of batter.
Grease the baking dish with butter or oil. Pour the batter.
pre-heat oven at 180 degree Celsius and bake it for 35-40 minutes.
Check after 35 minutes by inserting skewer or toothpick, it should come out clean.
Let cake come down to room temperature.
Take white chocolate and coffee powder, melt in double boiler or microwave add cream. Mix well.
Pour it all over the cake. Garnish with chocolate chips

9. Melt white chocolate, fresh cream and coffee powder.
10. Pour it over cake (cake should be of room temperature).
11. Garnish with chocolate chips. Serve.
